make code generic so it's easier to apply to another model #5

potential tasks:

[ ] either re-write all code to use a standard set of variable names (e.g., lon, salinity, temperature) or stick with the llc4320 names (lon, Salt, Theta)
[ ] add a section where the user can specify variable names used by that model (e.g., Salt or salinity, lon or longitude)
[ ] test with a new model - e.g., ROMS in the California Current from CenCOOS as discussed at OHW
