Description

This PR removes emotion in favour of Tailwind to allow for better parity with the rest of the mento ecosystem

Testing

This PR should have the correct information, however the styling is unimportant as it will all be nuked in the following tickets

FWIW I did not review the code in full given that pretty much everything changed but looked good at a glance
