These docs aren't perfect, but they're a start on documentation the process to generate a schedule for Minnebar, so it doesn't all live in Paul's head.

Add SCHEDULING.MD doc with instructions on how to generate a schedule
- This file lives in the /doc folder
Remove old crufty files from the /doc folder
