change -- to em dash, add some commas

We have to work out our process for making changes to actual content as any change to primary english content messes with the i18n / translation stuff. I guess we probably want to have master evolve and fork a branch for the "stable" release which is what we then have people translate. We probably need to open an issue about this and think it through.
