Switch from geojson to gpkg for vector data in example data #42

This applies to the supplied example data and the suggested intermediate file(name)s.

The geojson spec states that only EPSG:4326 is to be used for geojson files, and although many codecs can read/write geojson with other projections, unexpected problems can occur.

Also, .gpkg is a compressed binary so it requires less storage space which could be relevant for large projects.
