Default to info-level logging #37

The default log level has now been updated to INFO. I've also made a new exported function NewClient which allows you to specify a set of options, including the logger configuration.

This is all in service of speeding up gozw, as we've observed that the pairing process is very sensitive to timing.

Tested and seems to work fine. Do we want to merge all of these changes into master and cut a release?
