Would it be possible to make a release for OpenHAB 3?

Maybe at some point, but for now I'm using OpenHAB 2 and have no plans to update in nearest feature. You can use https://www.openhab.org/addons/bindings/gree/#gree-binding, it should work all right on OpenHAB 3, and it's virtually the same plugin.
