add option for mappings overrides #146

For Exchange we are using elastic search directly in order to have interleaved results that are a combination of exchange (geonode) and registry layers. This enables setting an environment variable to point to a json file with additional mappings to get merged in with the registry mappings to allow for more customization when accessing the registry elastic search directly.
