If we reexposed preserve-yaml and we found it to be useful, we should add it back to the YAML intelligence schemas and to our general docs.

Initially keep-yaml was exposed, but then removed (https://github.com/quarto-dev/quarto-cli/commit/a7f26f09f2882f266087cd60762e7ab96e3be810)
keep-yaml is still documented though... but not working anymore https://github.com/quarto-dev/quarto-cli/blob/231df38a2591d5b0ecc96a6ce2af685a2f8611f6/src/resources/schema/document-options.yml#L280-L285
A new preserve-yaml was added added later (https://github.com/quarto-dev/quarto-cli/commit/fc6deb64d64fe8eac4f792c70e07825d54432403) to fix a docusaurus issue, but undocumented
