simplify the adc schematic To remove pull up/down, and switch to arrays

Next step would be more compact analog section of the PCB - could be separate ticket, could be this ticket

I'm going to stay away from PCB layout on the main board for now. Sorting through the ADC should be simple enough. Are we sticking with the current opamps for now?
