Purpose: Files were difficult to read with many useState and useEffects, can be confusing to understand as a new dev.

Notes:

There is more to do regarding refactoring custom react hooks, but some of this overlaps with #17
This PR is for the sake of committing progress early, while we first refactor the codebase to use react-query
Using react query will reduce the need for custom react hooks, and will reduce the time it takes to implement this refactor
