📌 [Deps]: Pin ESP32CORE_URL to 2.0.17 #113

We need to pin the ESP32CORE_URL to 2.0.17 as the latest Version (3.0.0) causes several issues

should be fine as it is currently fixed to 2.0.16 -> https://github.com/sensebox/sensebox-sketches/blob/main/Dockerfile#L7
