Add metadata for STEREO/LET #64

Add metadata for STEREO/LET, which right now is empty (because we didn't use the data so far). This needs to be extended to https://github.com/serpentine-h2020/SEPpy/blob/main/seppy/loader/stereo.py#L260-L290
