Rename to something that is available on PyPI #3

py-grep isn't allowed on PyPI - it's too similar to pygrep.

I tried pyseek because I checked https://pypi.org/projects/pyseek/ and it was free - but that's because I should have checked https://pypi.org/project/pyseek/ singular not plural!

Got ChatGPT to try a bunch of options:

symbex is good enough. I like the "symbol extraction" idea.
