Fix MySQL setup #8

/var/lib/mysql volume fails to create if the local directory isn't empty; moved custom folder
healthcheck now uses the proper root password
setup.sql creates user with mysql_native_password enabled
custom my.cnf also enables mysql_native_password

I also changed the t2_proxy network since I didn't see any benefit in having it external in a full stack installation. Please correct me if I'm missing something.
