combine and create new classes so that different models can be used interchangeably and reduce redundancies

[x] combine classes for embedding-model and umap-model call
[x] create unique time-stamp directories where embeddings are saved as .pickle files
[x] ensure checking if embeddings already exist before recomputing
[x] align imports so that only module's are imported when needed

classes exist now the calling to get the umap embeddings just has to be implemented
