Updated Elasticsearch to 7.8.0 - Updated Gems to use this version
Updated various gems to current versions performing rspec tests to insure everything worked correctly
Notes:
Faker - Syntax changes in faker required updates changes to factories.
Simplecov - Locked to less than 0.18 due to circleci incompatibility
